I actually ran a Highlander X-Wing tournament back in October, in part so that newer players could play in a tournament and not get shredded by Phantoms and Fat YT's. Here were my rules:
THERE CAN BE ONLY ONE!
Modeled after similar event formats for other games, the theme for this tournament is that you can only bring ONE of any given ship or upgrade.
Detailed List Building Guide:
-You may only have ONE unique pilot in your list
-You may only have ONE of any type of ship in your list
-You may only use ONE of each type of upgrade card (ie. you can only have one Elite Pilot Talent upgrade, one astromech, one missile, etc.)
-You CANNOT mix factions together (so just like any other tournament, you must have either a Rebel or an Imperial list)
-To encourage list variety, you MAY NOT use unique YT-1300 (Falcon) pilots or unique TIE Phantom pilots. You MAY use an Outer Rim Smuggler or the generic Phantom pilots.
Example of an extremely horrible list using this format:
-Maarek Stele (27)
--Expose (4), Stealth Device (3)
-Bounty Hunter (33)
--Ion Cannon (3), Intelligence Agent (1)
-Obsidian Squadron Pilot (13)
-Scimitar Squadron Pilot (16)
Explanation:
-Since I used Maarek, I can't use any other unique pilot. I'm also a bad person.
-Since I used Expose as my Elite Pilot Talent, I can't use any other EPTs in my list.
-Since I equipped a Stealth Device to Maarek as modification, I can't equip any other modifications to other ships.
-Since Maarek is in a TIE Advanced, I can't use any other Tie Advanced(s) in my list.
-Since the Bounty Hunter has an Ion Cannon and an Intelligence Agent, I can't equip any other cannons or crew upgrades when making my list.

That looks like quite an interesting format for listbuilding. What was in the winning squad?
I love the idea of a highlander tourney. Gonna host one with my friends.
Might even go a step farther and have an x-wing draft. One ship of each type and one of each card. You take turns selectinG in 'switch-back' order (1.2.3.3.2.1.1...).
I'd have to consider if cross-faction ships would only be represented once. Or once per faction.
Should be interesting for 4-8 players.
