Is religion or belief mentioned in any of the game books? I know about the Force of course, but that is not allowed by the Empire and people don`t even believe in it anymore(at least choose not to out of fear).

So I(or my players) can just make up whatever and not contradict the books at all? 
In such a large galaxy you could make up entire cultures of new races and be unlikely to contradict any of the canon.
Onslaught at Arda I has a Dessellian NPC named Dorrian Vodani who follows the teachings of Corrimias, apparently a famous Dressellian philosopher. I think the entry starts on page 60.
