Try it with EI, and it's a lot of fun. It's not super competitive, but it's really fun.
So, you use SoT to change your maneuver, and take a stress.
You remove said stress with Porkin's ability.
38% of the time you take a face down damage card.
You then spend your only action to use R5-D8.
63% of the time you discard that card.
So, when using Stay on Target:
62% of the time you get an action as normal
24% of the time you lose your action
14% of the time you lose your action and take a face down damage card
That 14% chance is a little too high for my liking.
X-Wings die pretty fast.
Action-less X-Wings die even faster.

Alternatively, you've spent your ability to gain an action to do something far more profound than any boost or barrel-roll.
You have all 2 or 3 speed forward/bank/turns at your disposal.
Pick the one that suits your style better.
As a PS 7, you can choose which one to use.
3 Turn to the Right too dangerous for you? Switch to a 3 Turn to the Left, and basically pull a -3 Koiogran out of your back end.
Almost out of the enemy's arc? Turn your 2 Forward into a 2 Bank to dodge.
Every.
Single.
Round.
Then, on top of that insane "Action", you have a 5/8 chance of getting a free Target Lock or Focus action.
Moreover, your incredible unpredictability and ability to simply avoid arcs gives you time to regenerate damage dealt to you, even if it was dealt by something other than your ability.
So, yeah. You don't joust with this thing. You get as crazy as Echo.

Porkins has 3 hull. He's an X-Wing, not an E-Wing.
I fully intend to try this during my next casual game. Can anyone else provide experience?
I tried Porkins with Expert Handling and Stay On Target, he still blows himself up pretty hilariously.
In all honesty, there isn't enough hull on an X-Wing to use his ability comfortably in even a semi-competitive environment. If he were in a Y-Wing, where he belongs, it would be a much different story...
Used it a couple of times. Was kind of all the rage when stay on target came out. Made him lots of fun and surprisingly nimble. Problem we had was it didn't matter since his pilot skill was locked at seven and we were trying to find things that could chase down phantoms. Same problem with the Super Farlander build. Against stuff below your PS, you are awesome, anything above, you are a pile of wasted upgrades. But fun as hell either way.

Both are not super strong but both can work. They are unreliable and sometimes he will kill himself... Or he goes to town and robs everyone of their candy.
The thing is that the X-Wing is an unmaneuvrable piece of trash at the moment, and Porks is someone that can remedy that for a little risk. And i like that.

Try and get Porkins as a flanker if you can. This way you don't always need to use his ability. Just because you can take risks, doesn't mean you should take them all the time.
Porkins will struggle against Higher PS pilots, If you can get Intel agent on a ship it really helps.

Totally anecdotal, but I used his ability 6 times in one game to K-turn or Push the Limit (or both; that's way fun!), and he didn't deal a single damage to himself. I still lost because I was up against both "Whisper" and "Echo" but it was loads of fun!
I have found this works pretty well.
Porkins:
Stay On Target or Expert Handling (for more of an arc dodging role),
Hull Upgrade
R5-D8.
You can swap the Hull for Engine upgrade or Experimental Interface for more lulz and stress.
I have used this build for Fat Boy several times before after searching for something he can be good at. I think slippery tank is about the best I have found. He can be incredibly tough to kill and annoying if the dice gods favor you. He has regenerated 5 hull for me over the course of a game before and will reliably regenerate at least 3 if you can give him a chance. The Hull Upgrade gives you more breathing room to recover. Think of him like Corran and make slashing attack passes with time to regenerate.
Expert Handling can be good with him especially against more agile opponents, but SoT is more reliable and makes sure that you are pointing at something. His ability also helps out with jousting as you can K turn, clear the stress and TL or Focus to hit harder. Not everyone expects that and I have had TIEs try positioning for a kill as Fat Boy K turns, only to eat 4 red dice at PS7 with a TL/Focus. Fat Boy really shines as a jouster when he has some action support as he can run R5-D8 if he suffers damage from his ability and take another action, keeping his hull topped up. or he can soak the damage and double action for a TL + Focus shot. Cracken is slightly better in that regard, but if you plan ahead, Dutch can be really useful.

I might try this:
Jek Porkins + Stay on Target + R5-D8 + Hull Upgrade
Keyan Farlander + Stay on Target + Mangler Cannon + Advanced Sensors
Outer Rim Smuggler + Intelligence Agent
ORS moves first, being a big blocker that gives you the info you want for SoT and has a decent Range 1 shot and a likely target lock.
So, I think after hearing he's like Corran I should try Corran with him.
Update: Marksmanship or VI 2pts init instead of Hull since we have Biggs for early game.
This is not a tier 1 list, very casual. Not enough firepower on first pass still to matter. No maneuverability to speak of. No Phantom soft counters at all.
