Can a unit use part of the move points it has, perform an action, then continue moving? For instance, could you move to a door, open it, then walk through? I can't find it in the book but I thought I remembered seeing something about this. I could have just been imagining things though, as I am prone to do.
Breaking up a move?
The move action supplies you with movement points. These points can be used at any point in the turn. As in before and after an action such as opening the door or attacking.

Who are these intellectually stunning and physically attractive Master of Rules you speak of? From what lands do they hail? Exactly how fine are their description of rules?
But yes, as long as you don't halt moving on another figure (see FAQ in rules forum), you are free "break up" the expenditure of allocated movement points as you see fit.
"Movement", RRG, Page 19:
Performing a move does not move the figure; it only provides movement points that may be spent during that figure’s activation. This means that a figure may use its first action to perform a move, followed by an attack, and then spend the movement points. It may even spend some movement points before the attack and then some of them after the attack.
