So I'm running a campaign, and my party is going to be venturing into the Shadowlands of Kashyyyk, does anybody know of/have stats for some of the beasties that one might encounter on Kashyyyk? Any help is greatly appreciated!

I suggest you "re-skin" a beast stat of the closer type from the published material.
What types are you interested for your encounter? There are a lot of interesting actions that would contribute to the story, like ambushes (Stealth opposed Perception), poison and knockdown (Resilience to resist).
Wookieepedia has a list of creatures, but no stats obviously, youmight be able to reskin some of them as Rusak suggested.

This is pretty much what I do whenever I have a critter that they haven't statted. The important thing for the party will be how you describe it.
Pretty much what all those guys wrote, but with one caveat: DO NOT WING IT! Really, take the time to develop the crtters and write their stats down. I had just two months ago the event, that a GM thought Krayt dragons have wings and breathe fire...
If you have access to this book, and maybe the ability to do some conversions, it looks like there are a ton of creatures in this D20 supplement.
If you can find one, Star Wars Gamer #4 had the article Secrets of Kashyyk which had some if the creatures in the first link in it.
The Stay on Target book from AoR is actually quite full with rideable animals, some of which can give you reference to balance the stats!

As the author of the unofficial bestiary, I am going to be making a book based on Kashyyyk, its creatures and its rich history as a adventure module, similar in vein to Jewel of Yavin. I never think to hard about it. If I'm mid game and suddenly need a creature I'm usually just doing a:
"hmmmm, it's big, uh Brawn 5, brawl 1. Soak....20 seems good, 15 strain. Soak 6."
There you go a moderately nasty critter good to go. Need a spike tail, up the damage one. Need some poison, add a resilience check with some strain damage or a stat penalty.
No need to overthink.
