We are going to be holding a 30pt Furballs game at my local club. Any suggestions for some decent single small ship builds?

Sounds like fun. I like ideas that break up the 100pt DF (although I do love my dog fights). Not too long ago we ran a 65 pt. small base ship only night. Good fun!

You'll be functioning as a mobile asteroid to hide behind so you might make some allies.
My FLGS runs a 35 point Furball variant, so I don't have any specific builds for you, but here are some of the things that I've noticed.
The regenerative Astromech upgrades are worth their weight in gold.
Knave + R5-P9 is 30 points exactly, and gives you 3 shields to regenerate, while also forcing the opponent to chew through 3 agility to get there, and having enough speed to get out of combat to safely regenerate.
"Group Hug" abilities are also great. Stuff that benefits folks that are attacking people that aren't you...
Squad Leader doesn't have to target an allied ship. Bring this along, and choose a ship to buff turn after turn. It works as an offensive and defensive upgrade for you, as you're dealing extra damage (through the ship you've buffed, rather than your own attack), and folks are more likely to attack the ship that dealt them massive damage than the ship that is just going around buffing different ships.
Heck, another player might start bargaining with you, and try to bribe you into buffing them. Play the players, and you win the game.
"Rebel Captive" is also worth its weight in gold.
It dissuades your opponents from attacking you, as no-one wants to be the first ship in the line-up to get the stress. This gives you many turns of safety before folks decide that the stress is worth the damage.
Do NOT try to screw with multiple ships per turn.
Upgrades that effect many enemies negatively (Mara Jade, Ruthlessness, Assault Missiles, Bombs, et c) cause many enemies to be annoyed with your ship. That leads them to wanting your ship off the board, resulting in your inevitable loss.
Ionization is surprisingly terrifying.
Everyone wants to attack from where very few will attack them. Ionizing a ship just a few times forces them into the middle of the scrum, where suddenly everyone has a shot on them. You don't deal the kill-shot, but you've killed them nonetheless.

Sigma phantom with rebel captive and just stay cloaked. You can't attack anyone and they won't bother you because of your 4 dice defense and stress dealing. One it's down to where you'll start getting targeted do what phantoms do and fight.

His pilot ability ensures that each time you are attacked ineffectively, the attacks that follow will be increasingly ineffective.
Stealth Device increases the odds that the enemy attack will not hit.
The rest of the points go to giving you +2 dice at range 2-3, meaning that your expected damage is what your maximum damage used to be.
Your actions should be defensive, excepting only when you do not expect to be attacked at all.
The cannon will do enough damage on its own.
With 4 green dice, Focus > Evade, excepting only when you need to dodge one or five incoming damage. It also lets you get the kill more often.
With 3 green dice (i.e. after loss of Stealth), you want to Evade.
Even better than Focus? Getting into a position where no-one can attack you, with a Barrel-Roll. That's gonna be a rarity, though.
Target Lock only in the exceedingly rare position of no-one having a shot at you, even without arc-dodging.
