Episode VII and a new Starter Set

Pilots separate from the ships: you could put Poe Dameron flying his x-wing 2.0 or the square dished falcon.

Given they originally had the pilots separate and actively chose to combine them, this is highly improbable.

That's a terrible shame, especially since they seem to feel that re-issuing a pilot in a different ship with a different pilot ability is a no go, leaving us stuck X-wingless Corran and Tycho.

That's a terrible shame,

Any pilot in any ship. The game would either break or design options would be severely limited.

especially since they seem to feel that re-issuing a pilot in a different ship with a different pilot ability is a no go, leaving us stuck X-wingless Corran and Tycho.

While it may appear that way, this is actually cognitive bias. They're not refusing to print crossovers. They're not making crossovers in order to give you more options.

For the sake of argument, assume FFG designs a ship before they name it. Picture them making the TIE defender for the first time. They make a new blister, with say the usual four pilots, a PS1 and PS3 generic, and two named at PS6 and PS8. One has the ability to target lock target locked ships and the other can spend a token to flip up damage cards.

They consider calling these pilots Maarek Steele and Darth Vader.

What this does is lock you out of using the PS8 defender with Vader's x1 or the Vader crew card, and Maarek defender can't be used with Maarek x1. So they call them Colonel Vessey and Rexler Brath instead.

Originally the PS8 E-wing was going to be Luke. They changed it to Corran specifically so you weren't prevented from flying it with Luke's X-wing for no good reason.

The amount of ships FFG prints remains the same. Whether they call PS8 X-wing Number Three Tycho Celchu or something else has only one difference: whether you can pair it with PS8 A-wing One or not.

"same one of my earliest memories i watching hope on my uncle Brian's telly and then being handed over the video tape so i could watch it when i liked, i loved wars as a kid and never once heard Ralph mentioned."

as other people have mentioned...my experience as a child as of the 70's was Fangoria magazine and the fanclub and comic. all these helped expand my view of Star Wars. Pretty certain my first exposure to Ralph's work was in a sci-fi magazine around the time ANH was out. If your first experience was with the video tape then most the initial fandom work may have faded off..or you didn't read the magazines that covered it.
