Let's say a ship with more than one evade token is getting attacked. Is it allowed to spend more than one of those tokens on a single attack?

I can't imagine any reason why you couldn't.
One evade token will cancel one die result. There's no limit on how many evade tokens you can spend on an attack, so if you've got a ship with 2 evade tokens, you can cancel 2 die results with them.
