Tarn Misons ability is the following:

"When an enemy ship declares you as the target of an attack, you may acquire a target lock on that ship."

It is clear that I can use his ability several times per round, but does this mean I can have multiple target locks at different ships at once (when they all attack Tarn Mison one after another in the same round) or just I can repeatedly change the aim of the target lock?

It means that you can change the ship you have a lock on. the only way for a ship to maintain multiple target locks is with the Weapons Engineer Crew card.

You can only have one Target Lock at a time (unless something like Weapons Engineer tells you otherwise) so Tarn is free to shift his Target Lock every time he's attacked, but can't have more than one total.

The best thing to use Tarn Mison with is the R7 Astromech, which lets you spend that TL defensively, then reacquire one when someone else attacks you.

But yeah, you can only have 1 TL at a time from an X-Wing
