Midichlorians should be debunked in the SW-verse as medical hokum, much as "bad humours of the blood" have been in real-life, or how cigarettes were pushed by doctors as beneficial in the 40s and 50s, or when cocaine was available over-the-counter.
High midichlorian count in force-users is just a coincidence.
Maybe they're parasites that feed off the Force, and a high count means you have enough Force Power o allow them to reproduce a lot?

They dont have to. Its already been shown in the movies and other mediums that midichlorians dont dictate capabilities of for users. Ghosts for one are powerful yet have no midichlorians. The Sith and other Darksiders constantly go beyond what is considered natural ehen it comes to force abilities. Yoda in the last season / lost season learns that he and in effect the Jedi order of his time and probably the past, are not as correct as they thought in their understanding of the force. These force being teach Yoda how to still exist in the material world. Youll notice his teaching about the force is a tad diffrent than what he says about it in the past. In universe thats because of his new teaching of the universal force and living force.
