Core: Mel with Lightbringer is out for Baratheons, Bronn is out for Lannisters.

Bronn attacks in a military challenge and wins unopposed, Lightbringer is knelt...so is Mel then killed by his deadly, or does deadly just not affect anyone?

Deadly can only kill defending characters, so Mel is not legal target, since the challenge is unopposed. If you managed to give her a military icon (which is possible with cards from outside the Core Set) and decided (unwisely) to defend with her, you'd have to kill her for deadly (assuming you did save her from claim).

Thank you! For catching my mistake and for answering the spirit of my question (does a knelt or discarded 'save' prevent you from dying from Deadly)

Save (from being killed. discarded etc.) can be used regardless of the action causing the kill, discard etc. (assuming there is no Cannot be Save situation in play)

Note that you cannot do any responses if it is an end of phase action ..

Battle of Oxcross (kill a character if you do not win a military challenge during the challenge phase) occurs at the end of the phase ... you cannot save anyone from such a end of phase action

~Well, theoretically they could design an effect like Dragonstone Port: "Players may take actions after the End of any Phase initiates, but before it resolves". ;)
