I'm hoping this isn't a real spoiler, mostly because:

Decades of unending war mean that the final battle against the Emperor was kinda meaningless.

It reeks of "We saw Rebels, here's tie ins!"

There aren't mentions of X-Wings or A-Wings striking from a secret rebel base.

Likewise. I don't want my happy ending of Jedi dashed both in terms of what happens to specific character and to the Galaxy as a whole. And I'm really hoping they can avoid some of the biggest problems the EU had and 1) not have the new villain be a Sith 2) having the new villain more powerful than Vader and Palpatine.

I think this has alot to do with the fact that Palpatine, being the mastermind behind the war, was manipulating events for his own advantage and having a long drawn out war would be detrimental to his plans. He wouldn't have had the support he needed for the formation of a galactic Empire if the war had dragged on for too long.

On top of that it was 3 years of non-stop conventional warfare across the galaxy between 2 factions with immense resources to fuel their war machines. Compare that to the insurgency style warfare of the Galactic Civil War coupled with the untimely death of Palpatine and I can see a reasonable argument being made for a war dragging on for 30+ years after ROTJ. At this point we don't really know what happened in the intermittent period between EpVI and EpVII; they may have had lull periods between the fighting or there may have been a period of cold war between Rebels/New Republic and the Empire where little actual fighting took place but both sides continuing the conflict through proxy wars and clandestine operations.

That being said the ST does feels like a darker universe compared to the EU; the Rebel Alliance not as victorious over the Empire as we were lead to believe and the latter being more resilient and perhaps more competently lead after the death of Palpatine, who left behind a lasting legacy which is a testament to his genius.

It doesn't really matter if it isn't very realistic if the Empire collapsed after the death of the Emperor. It suited the kind of story themactically, which is more important... undoing that kind of misses the feeling of Star Wars.

Also, much of it was before it was decided that ships could cross the galaxy in mere hours. If the Empire was more distantly governed (due to travel time constraints) it becomes much more realistic that factions would break themselves off with the death of the Emperor to try and form their own kingdoms, leading to the infighting that was explained to cause the Empire's major collapse (and allow individual planets to break free and fight off the Empire in their own little areas).
