As of Tarkin... I picked up no sexist nor speciesist vibes from the Emperor, Vader, and Tarkin.
They did however have an anti core-world bias, as all three came from the rim.

Are you sure? All the information books I have doesn't depict the Empire as sexist and in a since raceist. The reason you do rarely see Female storm troopers or pilots is because of the physical hardship trainnes go through. You'll probably see more women in emost other Naval and Army jobs.I have no problem with there being female pilots, but I agree that in the movies there are no women depicted in the Empire. Additionally in all the books, novels, comics, etc., it has been established that women, along with Aliens, are under represented if not openly discriminated against. An example of this is Admiral Daala, who even disguised that she was a woman in order to compete in simulator tests. But that is not represented in this game. And again I do not care, but it feels wrong having so many female pilots.
There is also 6-7 alien species held in high regards in the empire, one being worried what the new republic would do to them if the empire fell. Its been this way for a very long time so I don't see how any of this is a new canon change
I think Daala was a isolated incident and after the experience she held on to a jaded sexist outlook one the whole empire.
If anything the empire is "demographicist" plenty of humans that had sided with SEPs or Neutrals became slaves or had there souls taken by Emperor Sidious.
It is referenced quite a lot in EU novels that the Empire was very sexist, not just against Daala. She was quite remarkable for this very reason, as it was VERY rare a woman reached that rank and amount of power.
Thats not to say there were no females serving, but there was a great deal of "glass ceiling" style of sexism in the Empire.

IM dont have many SW novels, maybe 7, but none of the source books I have old or new show the Empire as sexist. Like IVE said I havent red many SW novels but in the other mediums I also never saw sexism going on. Before Disney they had 3 Ace squadron Leaders in the Empire. They had this one Imperial women who was part of IMP security, she was a single Mom who couldnt wait to bring her baby to the world she / Empire librated. You also got that one Emperors hand with the lightsabre whip, she was a TIE Fighter pilot ace, so thats four aces before disney showed up.
Guide to warefare talks about why you see few women as Storm Troopers and in effect TIE Pilots because basic is just as brutle as Storm Trooper basic or at least very close. Its just very very physically demanding, its not sexist to what most people are capable of. What would be sexist is if they dont give them a chance to prove they are better than whats expected of them, without a good reason of course.
We see in pre Waltdisney source books they do let women prove themselves to be fit enough too be Storm Troopers or TIE Pilots. Theres one part in Guide to Warefare were a Scout from the greatest Imperial military school gives a women a 3 day evaluation with only a tarp, water and a survival knife, not sure about the knife. At the end of the 3 days he tells her "he will see her at the school." If the Empire was sexist he would have deep sixed her OR not even showed up to see if she was good enough to enroll for that school.
Well....nothing EU is "official". But it is explicitly stated repeatedly, so it's just as official as anything else not in the movies really (like most of the X-Wing game!).
If your talking post Disney everything in the EU is canon its only the fine detailes that could be made non-canon OR it will be mended as on writter basically said.
Pre Disney near the end of GL ownership it was stated that EVERYTHING IN THE END WAS IN THE SAGA. That was in regards too the other mediums, tv show, and movies and there relivence to the SW SAGA.
SAGA is a pretty powerful word to use when talking about what I posted above. Anything that is listed as being part of a saga is without question canon.

As I said, i think you're taking "sexism" as too extreme a term. Sure, there are female pilots and troopers. But the point is that the Empire makes it MUCH harder for them to attain rank or influence. Hence my "glass ceiling" comment.
There is a lot more to discrimination than just saying "you aren't allowed to do this". Again....yes, there were THOUSANDS of women in the Imperial service. No, they were not treated equally and were not given the same chances or fairness shown to the men. There are dozens of references throughout the novels, which you admit you simply haven't read.

I mostly agree with Extropia . I've read many of the novels , and I recall it being there, but I'm not going to do a search for you.
Where I would differ is in his recommendation. Many of the novels are horrid. Maybe not Holiday Special horrid, but definitely horrid.
Also, I definitely agree with what he is saying about the nature of sexism. Discrimination is very persistent because it's very subtle.

Headhunters made another appearance after brief ones in Clone Wars. They're not called "Z-95", just "headhunter".
The original clone were cycled out because of rapid aging and were used for mining basically. There was one clone in the book and Tarkin expressed surprise at seeing him. All the other stormtroopers were regular humans, one even female. However, most were masked and didn't play a large role in the story, so there could have been more.
The Emperor's council, which answers directly to Sheev (lol) and basically runs the day to day affairs of the Empire, contains at least two aliens if I recall correctly. The council is the highest position one can achieve in the Empire besides Emperor of course. So again, I don't see much speciesist behavior in the Empire.
It's also mentioned that no one knows who Vader is, and that he occupies a strange position in the Empire hierarchy. He basically just appeared one day and acts on the Emperor's behalf whenever he does things. However the Emperor sees Tarkin and Vader as equals.

The thing is though the Source books tell the most truthful account of the events it has written in it because character bias is next to never used. Also hidden plot points or angles in a novel are made clear as day in source books.

This was written by someone I think hasnt seen the source books. It doesn't mention the aliens that are held in high regard in the Empire, it doesn't mention all the humans from different sectors, systems, or planets that are considered slaves because they sided with the CIS. I will have to look up this "Firebird Society the article mentions in one of the source books I have but they sound like they are the ones who are sexist. If it true what it says in the article, the directly kill, indirectly kill, black-male, or sabotage Imperial Men they believe are sexists. If its true then theres two things I get out of this.
1) These are isolated instances otherwise they would be attacking the whole Empire.
2) They are nuts. They are willing to kill a guy just on a belief they are sexist. What if they just didn't like that woman, what if they really couldn't handle the requirements of whatever it was they didn't allow them to do, whether that's a promotion or a different assignment all together. Nope that guys Sexists kill him.
