Get a bigger table. Add one or two assault missiles for 10 points double or quadruple asteroids to avoid the line them up colonial style stupid game. And it's totally fun

Basically adding more ships doesn't hurt the game at all. The only - logical - downside is that the game will take longer to play, but it's still epic to do. People do play games up to 1000 points and more. It can just take more than 1 day to finish hthem ![]()
If you play allowing epic/huge ships, the listbuilding approach becomes quite different. For instance, when the presence of a Rebel Transport is a possibility, ships like Interceptors and Phantoms that are crippled by stress tokens become quite dangerous to field, due to the Jam Action.
