Why is everyone buying multiple Star Vipers? Buy one of those and one Agressor and you end up with 3 Autothrusters. Isn't that plenty?

Three is enough almost always. I just buy three of everything, for options and EPIC Games.

Three of everything..., apart from Interceptors I am not even close to that objective. But then again, my objective is to have enough of each squad for a basic casual game :-)
