I second Soontir Fel. Major character in EU - father of Jagged Fel, Imperial ace pilot, overall X-Wing Miniatures boss - but hardly any screentime in the movies (if he gets any at all).

There are so many good characters they tossed away. Fel, Thrawn (if not for the success of the Thrawn books theres a good chance we wouldn't even have any new star wars anything today). The loss of Kyle Katarn is one of the greatest travesties of the EU purge. he was like the Clint Eastwood and Chuck Norris of star wars. Farlander, Stele, Fel (hes badass enough to get mentioned twice).

Hopefully as they build a new EU they'll bring a lot of these characters back.
