Yes, I bet the answer is 'the ships haven't been released yet' which is the standard SOP for answering FAQs about upcoming ships.
So, the few players at the top are always playing the hardest opponents. It sorts faster, but it is brutal if you are at the top. It is easier to keep getting wins if you win with lower MoV, in theory, because you will be facing weaker opponents. The tradeoff here is that if you do lose, your MoV will be too ow to save you.
This has implications for what kinds of squads you will end up facing. For example, squads with only 2 ships are much more likely to win with 100 MoV, compared to a TIE Swarm or Rebel Swarm that will almost never win with 100 MoV. Undefeated players that flew 2-3 ships will generally end up flying against other players that also have 2-3 ships. You will avoid ever playing against a swarm during Swiss after your first round if you lose fewer MoV points than the best swarm player.

Typically, but we did get rule FAQ updates for Wave 5 ships this time.

Matches are by summed MoV. So long as you keep winning, probably, but losing even a single ship will eat a lot of MoV. There's also a lot of filtering - if you get to the final round and you and a swarm are the two undefeated, you're going to play it regardless of the MoV.

While I agree with much of what you said, I think it is potentially inaccurate to state:

Just because someone wins with a lower MoV, does not necessarily equate to them being weaker opponents. I don't think it makes you a weaker opponent to win all of your matches, but lose some ships in the process, thus potentially giving you a lower MoV than others who also are undefeated.

I think in terms of straight MOV analitics he was meaning a statistically weaker squadron to fly against, which would also be equated to a weaker opponent in most cases, certainly for the first round its a bit hit and miss but after 4+ rounds the stats don't lie.
