What would you choose? X-Wings, B-Wings, or Interceptors. I don't have enough Ties to go a pure 100pt list with.

Pure Xwings, or Interceptors has the highest value. Wedge, Biggs, Red, Tarn R7 is playable depending on meta.
Four Royal Guard interceptors is amazing as long as your green don't abandon you.
B-Wings all the way:
Dagger + FCS
Dagger + FCS
BSP + FCS
BSP + FCS
Simple but throws a lot of dice and puts out a lot of damage, or:
Dagger + HLC + FCS
Dagger + HLC + FCS
Dagger + HLC + FCS
because who doesn't like 3 HLC's ![]()
Unless your local meta has a lot of ps lower than 4, 3 daggers with hlc isn't a great idea.
My friend tends to play "pure" 1 ship lists and even competes very well with them at tournaments. Each list has 4 ships and each ship has a different pilot skill (for the most part) so he puts them on ascending number of pegs.
He has done this with X wings, B wings, HWKs (surprisingly very good), and Interceptors (without push) which just won a local tourney.
Backseat Driver B-Wings, if you can.
Bwing E2s with crew that would normally be pilots, like Lando, Jan Ors, Dash Rendar, Han Solo. It would be fun, and not so bad that it wouldn't be fun.
X-Wings! Luke with Swarm Tactics, Porkins with Swarm Tactics and two Rookie Pilots. Give Luke and Porkins each a rookie wing-man and you're good to go.
I flew against a hard list this weekend:
Rookie Pilot & Shield upgrades X4.
I also had good experiences with the following

Hobbie & Swarm
Rookie Pilot X2.
The B-Wing lists above are good to. I just get bored flying straight B-Wings, I never feel I have enough options on my dial and can't easily break formation and then reform again. Straight RGPs with PTL can be really cool, but pretty fragile/risky. I have flown them with Hull Upgrades and that helps a lot. I find opening up the dial to all the 1 and 3 manuevers can compensate for the loss of boost & roll options.

I like single ship lists myself.
Or i fly ships in pairs like real aircraft with a wingman.
A force with say a tie bomber, an interceptor and a defender in just looks a bit weird to me.
Rebel wise i like either XXXX, XXYY ZZZZ + HWK or AA XX
Imperial i like all interceptor lists or tie swarms.
I have two bombers and at some point i want to try a four bomber squadron.

The original trio of Luke/Wedge/Biggs was the standard for the early waves of the game, and it still holds up well now.
Strangely, 5 x Gold Squadron with R7's.
How could I forget?
5x Gamma Squadron + Seismic Charge.
^This one is seriously good, and not a gimmick at all.
30 freakin' hull, and the ability to cause massive damage outside of combat...
I had a lot of fun with this list..

Lt. Blount
- Assault Missiles
3x Bandits
- Homing Missiles
- Munitions Failsafe
100 points
Keep Cracken in the middle of the formation (straight line left to right). This allows him to use his ability to pass off actions. Blount always hits and causes splash damage with the assault missile. The 3 bandits have some teeth as well.
2x Blue with FCS and HLC
Farlander with PtL, Adv Sensors, ion cannon
Farlander accurately ions and then blues pound the vulnerable ship. Rinse, repeat.
When you said ONE SHIP list I thought, "That's gonna have to be one bad ass X-Wing."
I like something like this,
4x - Royal Guard Pilot (22pts) Targeting Computer (2pts), Veteran Instincts (1pts)
It brings four PS8 ships to play with that can make good use of the target lock, also I like this a bit more PTL.
