Bringing this ridiculous thread around to the actual topic at hand... am I mistaken, or would Red Five's ability work on defense? Or does it matter that the objective damage wouldn't normally get to resolve?

In short, no.

The lengthy version would be that your Blast Damage Icon type does not resolve when defending, so there is no option to use Red 5's Interrupt, since it states that it would be assigned to a target participating unit instead of the engaged Objective.
