Tie-Defenders?!!? Man, they really have taken the whole "Artistic License" with the star-fighter-time to whole new level!
A-Wings before the first death star
B-Wings with super lasers AND before the first death star
Tie-Defenders before Tie-Advances
No X-wings or Head Hunters
Whats next?! They introduce the crappy E-wing as the savior to the rebellion?!

I'm sure others have said this before so I apologize for any repeats.
There were A-Wings and B-Wings before the First Death Star originally. You see them in the early episodes of the Droids cartoon which was set fifteen years before A New Hope. Then later when WEG got the license they didn't research the cartoon and stated that the A-Wings and B-Wings were developed after A New Hope which eventually led to a retrocon creating predecessor models to the A-Wing and B-Wing.
If memory serves we see laser weapons using the tributary laser principle used by the B-Wing prototypes and the Death Stars in the Clone Wars era in both Legends and canon. I think we see some in Attack of the Clones in fact.
Just because the particular cell the series focuses on does not use Headhunter doesn't mean they don't exist or that they arn't used by rebel forces. In fact we know the Headhunters exist because we saw a variant on them in The Clone Wars.
As for the X-Wings we don't know that they exist when Rebels season three takes place or that they aren't being used by other rebel cells if they do exist.
As for the TIE Defender perhaps it is similar to what happened with the Interdictor cruiser in canon. The prototype or prototypes are deployed, something goes horribly wrong and it takes a long time before new prototypes with the issues fixed are produced and deployed.
The only thing that "bothers" me is that the X-wing is portrayed as a super advanced ship, when the movies gave the impression it was a outdated, but rugid ship.

Star wars as a set of movies and as the EU and beyond has always been a whimsical fantasy world in which evil rises and falls. I for one am curious as to whether Rogue 1 can shake that up.

I always got the impression that the rebels just didn't have the resources to keep them shiny.
That said, it IS an outdated but rugged ship. Incom developed the design shortly after the Clone Wars but got gobbled up by the Empire, but the rebels were able to make them very slowly.

Does it matter? Any of this "X ship came out at this time in canon" or "Y ship came out at this time in canon" debate? I mean a lot of this thread has been devoted to nitpicking a detail that is dubiously accurate at best based on source material, and isn't something that the movie devs have to bother really sticking to.

Alright, this is nothing but my own opinions and supposition.
The X-Wing was originally based off of the Z-95 Headhunter. However, the fighter show during the Clone Wars that most closely resembles it is the the ARC-170 fighter. And just as we saw improvements in capital ship design that can be traced from the early Republic cruisers to the Imperial battleship designs, I can see the move from the ARC fighter to the X-Wing.
Pure fan theory, but I'm think it makes sense that Incom was tapped by the Empire for the next general purpose fighter based of the ARC design and developed the X-Wing. And this would have been fairly early on during the Imperial refocusing.

I dig it. Although I think the logical conclusion of the Aethersprite is the A-Wing.
I might be wrong but I believe that in canon the Aethersprites and the A-Wings were manufactured by the same company. I know that in Legends the lead designer on both classes was the same.
In Legends the X-Wing was a middle ground between both the Headhunter ad the Arc having more firepower and damage absorbing capability then the Z-85 and more speed and maneuverability then the Arc plus requiring fewer personnel to fully crew.
It seems that "Visions and Voices" might have one of my players having to go back and tweak his character's backstory. Interested to see where/when/if we learn more about the Empire wiping out the Nightsisters.
When is Rebels actually on these days? I had it set up to DVR but nothing new actually gets recorded.

I'm guessing the issues with a new X-wing are more of a problem for old timer fans due to how they were initially portrayed versus how they were described in WEG and EU.
Original, 1977 sources (tried finding one of my old magazines on the shelves downstairs for an example, gave up) described the X-wings and Y-wings at Yavin as old, used, kept together with loving care, but formidable. There was even a statement about panels being left off of the snubfighters in order to provide quicker access for mechanics due to the craft being beat up and old. This may have been the source of inspiration for the appearance of the Clone Wars cartoon Y-wings vs. those seen at Yavin.
WEG and EU changed things but some old fans prefer the original old hot rod description they fell in love with as a kid.

You can see similar "exposed" looking areas on the top, rear, and engines of the X-wing when set beside what you imagine are the exposed areas on the Y-wing. Not as much, but it's still easy to imagine what original skinned X-wings might have looked like if given the Clone Wars treatment (not just the nose covered with panels).
Both X-wings and Y-wings were described as old with panels removed back in 1977, not just the Y-wings (iirc).
