Actually the EU goes into the Hutts "gender" a decent amount. It states that Hutts sometimes "identify" as a gender, usually when birthing a new baby Hutt, but not always. So It could be Jabba just identified as male rather than conforming to neither.

You sure about that? Most of the novels that I've seen touch on the topic referred to the fact that Hutts changed gender every couple of hundred years or so for the purposes of reproduction. Sort of like how certain frogs will spontaneously change gender. At least, that's how they wrote it in The Hutt Gambit.

IRT the hutts with lightsabers, real question here: Is that even possible? I mean, I understand anyone can pick up a glow stick and swing it, but can a species with extreme resilience to the force (i.e. the hutts, toydarians, etc...) become force sensitive? It would seem counter to their physiology.
I know it doesn't call these out in the books, but I'm wondering from a "canon-esq" perspective.

I read the Hutt entry in the Star Wars Encyclopedia, and apart from mentioning the fact that the Hutts are hermaphroditic, it didn't say anything about them choosing a gender. Are you referring to the Hutt entry on Wookieepedia? If so, I wouldn't put too much stock in that. The portion of the paragraph stating that Hutts "identify" with a specific gender is unsourced, and the Ultimate Alien Anthology entry that is cited at the bottom of the paragraph doesn't mention Hutts choosing their gender either.
Since literally anyone can edit an entry, the bar for inclusion on Wookieepedia is pretty low, and I wouldn't be surprised if someone added their own fan-fic or ideas without citing a legitimate source.

Hutts and Toydarians aren't necessarily immune or resistant to the Force so much as they are to being influenced by mind tricks.
There's actually a Star Wars novel that is based on a Wizards of the Coast Star Wars RPG module that deals with a Force sensitive Hutt.

I don't know about Jabba, but in The Hutt Gambit, Aruk Besadii Aora is specifically mentioned as having swapped genders to give birth to Durga. It's been a while since I read the novel, but I'm pretty sure it talked about Hutts being on a reproductive cycle in which they swapped genders every century or two.
Oh, this is getting complicated.
Gender is not the same as sex. In a way, it's a larger category of which sex is a part. Sex is typically male or female regardless of orientations, self-identification and social categorizations. Gender encompasses all sorts of things including social definitions. That's why it's "Gender politics" more normally than "sexual politics". With the former being about society and places within it, and the latter being about reproduction strategies and activity.
Often sex and gender are used interchangeably and there's probably more than one poster reading this and nodding going "yes, I know". But if we're going to go into actual discussions about the Hutts on this, it's probably best to raise the actual terms now just for keeping things unmuddled.
Honestly, Hutts may be both sexes simultaneously (they have both the ability to fertilize others and be fertilized), or they may alternate. Both of those are to do with sex and in a society where all individuals have both (whether at the same time or alternating) there has probably never arisen a real notion of "gender". Any gender they put on is probably a reaction to humanoids they deal with where they recognize it's a major issue for these other species and as a matter of convenience, adopt a "gender". If the Star Wars universe is similar to our own, they may typically pick a male or female gender based on how they think those roles are seen by other species - i.e. which paragon archetypes most represent how they'd like to be treated.
Here is a question I think is of greater impact to whether Hutts have gender amongst themselves - do Hutts mate with each other or self-fertilize? Did Jabba have to mate with another Hutt to produce Rotta, or did he do it all by himself? I think that is very relevant to Hutt "gender".
I also have this utterly charming image of a Hutt reclining on a divan one winter's evening avidly reading Ursula K. LeGuin's "The Left Hand of Darkness". The only sound is the occasional crisp turning of a page, the odd pause whilst the Hutt takes a puff on his/her hooka, and the sporadic deep chuckle.
For those wondering about the possibility of a Hutt Jedi, the EU/Legends precedent would be Beldorian the Splendid.
