Can anyone point me to a list that tells me which pilots and astromechs belong together thematically?
I know R5D8 goes with Porkins and of course R2D2 with Luke but there are several I'm not sure about.

I don't think there necessarily is a thematic list.... only droids that are reputedly linked to game pilots (other than the 2 you mention) are;
R7-T1: Luke Skywalker (in E wing)
R5-K6: Garven Dreis
R2-D6: Wedge Antilles (in Y wing pre Yavin)

I think potentially we could see more. It would be fun to end up with an E-Wing aces pack at some future date with a Whistler droid for Corran...

Wedge used a R5 unit. Most pilots hated the reduced visibility with the big R5. Wedge saw it the other way, there's less of him to be hit.

However, his paintjob is the same as R2-Q2, which is Biggs' on-screen droid (apparently a Imperial spy, as well?) He appears on the Tantive at the beginning escorting the surviving Rebel prisoners. I always thought those droids were prisoners as well, but interpret that as you see fit.
Also, Wedge's ANH droid was R2-A3, a Red/Silver/White droid.
