You get to chose between both options, because Draw Their Fire is an optional ability, but you certainly can have chewie take one crit away from the rookie.
Chewie can only draw off an uncancelled {crit} result, so it depends on what was rolled on the defence dice as well. If boh the {hit} and the {crit} were uncancelled then you can use Chewie and both ships would lose a shield each.

Either or possibly some other options.
As Parravon mentions you get get to make the decision after you do defense. If you are defending against [hit] [crit] and get an [evade] to cancel the [hit] now you are only looking at the [crit]. In that case you can have the X-Wing take the [crit] which could remove a shield or deal a card or you could have Chewie do the same; IF Chewie suffers the [crit] result it is still the X-Wing which suffers the 'hit' in game terms despite it losing no shields or getting any cards while Chewie is NOT 'hit' despite suffering the [crit].
