Basic rules are that riding a beast is a Survival check. Full rules will be in the Stay on Target (Ace) Sourcebook when it is released.

On page 73 of Force and Destiny there is a side bar on the right called "Custom Skills." It has a suggestion for exactly what you're talking about.
"If the Player Characters regularly visit worlds where beasts serve as the primary form of transportation, then Animal Handling might be in order." Referring to creating it as a custom skill.
Edited by DemigonisAnd given that Beast Rider is a specialization in the Ace book, it's probably safe to assume that riding a mount is very similar to riding a vehicle.
It would probably be safe to give the beast a Handling value, so that a Ronto might have a -2, a Dewback might have a -1 where a Tauntaun might be a 0 and a Varactyl might be a +1 or +2.
The creature has a silhouette and would have a top speed. A Ronto or Dewback might have a top speed of 2, a Tauntaun might have a 3 and a Varactyl might have a 4.
A Fambaa, like the ones the Gungans mounted their big cannons on, might have a top speed of 1, silhouette of 4, and a handling of -3.
Wound and strain thresholds would act as usual for the creature. Depending on the circumstance (and until there's more detail in the "Stay on Target" book), I might allow the Skilled Jockey talent to remove Setback dice from Survival checks used to pilot a mount. Other piloting talents could apply the same way.
Grab the " Operation Shadowpoint " supplement for the AoR beginner box. In there are profiles for an Onderon Beast Rider, a flying mount (Ruping) and rules for riding a flying mount. It's probably a decent starting point.
