That is how they usually fight, when they close their s-foils they go horizontal.

But the cockpit rotates so pose however you like

Not the way they are shown in the film stills from RotJ though.

They are shown flying almost horizontal away from the executor with foils out.

In my understanding the s foils close to allow it to land and are open in combat to give its weapons greater spread (and because it looks cooler).

X-wing game always had them in the position the model comes in May of been why they chose it.

It would also kind of throw your aim off having the canons off to one side.

I think it was chosen as it allows ships to fly close to each other easier, if you off set your B wing it take up a lot more room and you have the potential to need to adjust the peg height.

I like mine at about 45 degrees as it implies movement and you can tell it's in flight. the factory pose is horribly static.

I've got a spare B-wing that I disassembled to attempt this, however I could not find a place to slice the wings that wasn't going to destroy details and look horrible. I must have looked at it for hours trying to find someway to do it. The only thought I had requires either another wing piece or to make a duplicate using GS or something similar.
