So if you ignore obstacles during the Activation phase does this mean you'd be able to move through them and still be able to shoot as long as you don't end on them? Or would you lose the ability to shoot?

You never lose the ability to attack just for moving over an obstacle, only if you are overlapping one during the Combat Phase.

Yes so it is entirely possible using Dash to land on an asteroid and then barrel roll off it (assuming you don't lose your action for also running into a ship, which may be why you're on the asteroid in the first place).
