More specifically, does anyone know what the main color for the back of the SaV pilot cards is? Imperial is black, Rebel is red, etc. ...

I know it's weird, but I keep them in separate binders that are color coded, and I like to be prepared. Sometimes I think the organization of all the parts is half my enjoyment.

The maneuver dial is usually a pretty good clue to that, so I'd say yeah - orange-brown-ish.

Compare the dial colors to the card back colors (that we know both of for Rebels and Imperials):
