I'm currently leaning towards a Delta-class JV-7 Escort shuttle but the Star Wars universe is big and I probably don't know even a fourth of all the ships that exist.

And the first person to suggest a Star Destroyer or something equally big, gets a nuclear boot to the head.

Apparently I didn't make it clear enough at the beginning. I'm looking to build another ship that can be classified as a large ship, not fighter sized or huge/epic. So far the best suggestion has been the YT-1930 but I suspect that would be better off as a conversion of a regular YT 1300 instead of a scratchbuild.

Gabe69velasquez has some cool-looking ships, and my hat would go off to you if you could build those, but they seem a bit complex. Also, an 'escort freighter'... That seems like a rther bizarre classification to me.

Regarding the escort shuttle, on the other hand, this is my favorite visual version of it:
