Have there been any stats published for Tusken Raiders? I would be surprised if not since they are such an iconic part of the Starwars universe.

Are you looking for stats as a species or as NPCs?
For the PC approach, I'd make them humans stat-wise with a free rank in Survival (Animal Handling if that's a skill for the campaign) or Melee. and the ability to remove a setback die due to heat. 100XP.
As NPCs, you can easily take any minion (even Stormtroopers) and gear them down to Heavy Clothes, Slugthrowers and Gaffi Sticks.

I am surprised that they have not been included in the NPC roster. I would have thought that they would have been in one of the first adventures or in the core book. Since they are such an important part of the Starwars Canon I look forward to seeing their stats eventually.

They only really matter when you are on Tatooine, same with the Jawas.
That said, I think FFG focused on statting things that players had a high chance of running into on multiple planets instead of just isolated on one. Considering that it's pretty easy to just file off the face of one NPC and give it another, it works out until we get official stats or until someone caves and writes up their own stat blocks.
I could see an entire book devoted to Tatooine. This would cover the major settlements, Jabba's Palace, The major cantinas, and the various Tusken Tribes as well as the moisture farmers that are plagued by them. There probably would be several tiers of tusken ranging from the rank and file minions to the chieftains who would be at the Nemesis level.

That would be fun. I'm not going to hold my breath for it, but it'd be fun.
FFG seems to be taking a few pages from previous versions of the RPG, but seems to be avoiding some others. Big equipment books being one of the things to avoid, and having sector books being a nod to the past.
While Tatooine would be an interesting book, I'm not sure if it's be full-book worthy. I mean, look at Corellia: there's a lot there, but they didn't go with all of the nitty gritty, but rather a few notes to get rolling and then covering the whole sector.
If anything, I'd expect it would be added to a Hutt Space guide with Nal Hutta and Nar Shaddaa, if it's ever created (FFG, if you're reading this, I'd buy that in a heartbeat!)

Glad I could help! I was actually asked this for a player who really likes Tuskens (but won't be playing one...this time) and figured I should get cracking on it. The NPC versions are basically going to be Stormtroopers geared down, given that advantage against heat, given a few bits of Tusken gear (goggles to help with dealing with the glare, for example) and fitting armament, and change the skills to better fit them.
This way they walk away with Brawn and Agility 3, which is pretty solid for an NPC that lives in the wilderness.

I had my players clash with some Tusken Raiders on Tatooine way back at the beginning of the campaign. Here are the stats I made up for them:
Tusken Raider (minion).
Brawn 3 Intellect 1 Willpower 2
Agility 2 Cunning 2 Presence 1
Soak 4 Wound threshold 6
Skills (group only): Melee, Ranged (heavy), Survival, Vigilance.
Abilities: Desert natives (remove 1 setback die due to hot/dry conditions).
Equipment: Gaffi stick (Melee; Damage +2, Critical 3, Range [Engaged], Disorient 3, Defensive 1); slugthrower rifle (Ranged (heavy), Damage 7, Critical 5, Range [medium], Cumbersome 2), adverse Environment gear (+1 soak, remove 1 setback die for heat).
Note that there's no reason why you can't have rival and nemesis Tusken Raiders as well as minions; I just wanted to give my beginning players a moderately tough fight.
