If I were to use painter's tape around the canopy and then used a wash, would it go through the tape? I guess I could always use three or so layers of the tape?

In my experience, the issue is seeping under the tape, rather than soaking through.
It's a pretty large area, just go round it with the wash. As it says in my album I didn't have masking tape and just wanted to get painting. Hence the cockpit being grey in that first pic.
Just waited until I'd painted everything else, painted it black, then several coats of thinned gloss varnish.
