When there is a job that needs to be done, they are like the Apple Motto - "There's and X-Wing for that."
My Favourite ships from the movies were the B-Wing, The Falcon, and Slave 1 - so the fact that all three are great to field in the game makes me a very happy panda.
If I had to pick just one it would be the B-Wing ......but when would I ever have to pick just one?

A-wing! Fast, agile, and relatively cheap. Can't wait until aces comes out!
B-wing coz it's my favourite from the films. Also it's pretty good in game.
Hard to say because it depends on what you want from the ship and your playstyle. In terms of sheer versatility:
Rebels: X-Wing (used in Biggs Walks Doggs, HSF, and other builds)
Empire: TIE Fighter (used in TIE Swarm and Mini Swarm builds)
A-Wing.

The whole point was to see what people thought is the "best ship" not "ships" so sorry if I didn't count your post.

Right now for me its a toss up:
Currently I like combining the E-wing dial, action bar, Push the Limit, sensors, and astromech to see what silly combos I will come up with next, but the (new) A-wing cards will allow the combination of PtL AND another EPT along with the action bar for goodness.
So, currently its the E-wing (but might switch to A-wing when aces hits)

I think my favorite is the TIE Fighter.
I think the named YT-1300 and Firespray may actually be better.
Also I have only played the E-wing a couple of times, but it sure seems to be coming up from behind to be a contender for one of the best ships to play. (even though I hated it with a passion ever since I saw it in Dark Empire, when it first appeared)
Aesthetics: Interceptor.
Reliable firepower and hard to take down: YT-1300.
Favorite of the Expanded Universe: Z-95.
Best as in "always try to fit in my list"
Imperial: Howlrunner.
Republic: ? not sure yet.
Interceptor, pilot 6 or higher.
For the points, nothing beats a TIE Fighter in my eyes.
E-Wing
