And I absolutely did not claim this was a reason to ignore the math. I was trying to demonstrate how, even if you don't want to play mathematically optimal lists, there is still good reason to learn the math behind it.

I can see where you are coming from there. And really I would argue stealth device is primarily a worse investment on Interceptors. You could argue that for pure damage it's a wash, but the other thing in Hull Upgrades favor is that it keeps Interceptors from getting one shotted. Personally, I would argue that being as good as hull upgrade less than half the time, and better than hull upgrade less than a forth of the time is not worth the risk of a 1 hit KO. But perhaps that is just taste.
On the Defender or the Phantom, which are already not nearly as at risk of a 1 hit KO, I think it makes more sense.
But if I can remove the risk of a 1 hit KO from Fel, for the same price as what you might argue is defensively an equal upgrade? Yeah, I'm going with that option.
I just completed my first game using defenders and a phantom against my friend i equipped two defenders with HLC and they wrecked face so well that we called it on turn 3.
Not sure i'd make it a permanent thing but it worked for this outing, one defender took out wedge easily and the other vaporized etahn leaving him with three ships while i had all mine in the rear arcs ready to finish him off in turn four.
Expensive yes but denying him that extra dodge die worked wonders.
