1. When Wex Pyke (KotS) is attacking, is it possible to declare defenders that have no crests, but are immune to character abilities?
2. Does declaring no defenders meet the requirements for triggering Double Bluff, or is it necessary to declare at least one defender?

Immune characters can block when Wex attacks as his ability is working on them directly.
For double bluff, it checks the framework action for declaring defenders, this happens regardless of actual declared defenders so it will work with no defenders declared.
I believe the wording for an ability like you are thinking of would be in line with 'after 1 or more...'
