The real question is, how do you pronounce Wookiee? How do we know the people who conceptualized the term didn't intend for it to be pronounced a different way than it already is in English? When you think about it, that second E makes a big difference. Perhaps the emphasis should be on the second syllable instead of the first.

I wish that was enough evidence to settle the matter, but too many other names were pronounced multiple different ways in the movies. There's Han, who was alternately pronounced like Han or Hon, or the Falcon, which was sometimes pronounced Folcon.
