I want a cloth tarp with a star destroyer printed on it, I park my car near the game surface, throw the tarp over it and,....they we go back in the house because who wants to play in the garage.
The simplest thing to do would probably be the imperial versions of the CR90 Corvette.
You have two options:
1. DP20 Frigate (AKA Corellian Gunship)
2. Assassin Corvette
Both are in the exact right size and close enough looking to the CR90 that they will be semi-iconic.
Personally, I don't know which Of the two I would choose, but it would be one of them.
As for what I think FFG is actually going to do...
They're probably going to finagle a star destroyer in somehow. But the only way that seems reasonable to me is to do a set piece of the bridge or something. It doesn't move, has light armament, and actually fits on the table...
Want Hound's Tooth more than any other ship right now. Totally awesome ship with Bossk.
MUST HAVE at either Large or Huge size. It would work either way. Better at Huge IMHO.

Honestly, with the scale down, as a huge ship Hound's tooth would be about the size of the Falcon.. I think as a large ship they can do it justice and you can use it in non epic scale games as more than just terrain..
The Assault Transport, Skipray Blastboat, Hound's Tooth and IG2000 would be great in the mid to large range.
If we're looking bigger, then the BFF-1 Bulk Freighter (with removable Class A Cargo Containers that can also be separately used as obstacles/objectives) would be a good Imperial counterpart to the Rebel Transport... maybe boxed with an Assault Gunboat escort (I can dream, can't I?)
If we're talking iconic there's always the Nebulon B Frigate... ship it in three interconnecting parts - the main hull, the connecting spar and the engine block. Never going to happen of course - it's as tall as the Corvette is long - but it would be worth it simply for the logistics of actually putting it on a base and moving it around a table...
For some reason I cannot envision an Empire Vessel without access to Weaponry. So I have a feeling that both "Huge" ships for the Empire will be able to Attack through a Primary Weapon or each section will be allowed to equip at least 1 Hardpoint.
As for Class of Ship I'm to sure Cannon-wise. But I think the larger of the 2 will have a more supporting role similar to the Transport and the Smaller of the Imperial "Huge" ships will have the footprint of the Transport but a more focused gunship/attacker-role like the Corvette.

So we all want big ships for the Empire. But we all seem to want ridiculous things. I know my group would be content with an Empire upgrade pack for the CR-90. It would be cost effective for FFG and easily produced to get in to my greedy fingers. And why do we need big ships? We have Slave One. Lets get more bounty hunters.
So lets be thoughtful towards the people that we throw our money at. They have done amazing. They will not let us down. They have not done so yet.

I doubt that we'll see an upgrade pack for the CR90, I had hopes for a set of Imperial pilot cards with the CR90
but was let down, hence I'm looking at something realistic now like the DP20 as an Imperial counterpart,

A BFF-1 Freighter filling in for the Rebel Transport. Later on, a rebel conversion pack (crew / pilot cards, base card). With removable cargo containers and bases for them matching the cargo containers from the 'Falcon.
The Vigil class. Honestly as close to an ISD style ship we can get I think. Much as I love the twin-prow Customs Frigate, I can't see how that can sensibly be made into a gaming model - it'd need supports at the front or a very heavy duty stand.
An Imperial conversion pack for the CR90 Corvette.
Gozanti cruisers. Both Rebel and Imperial flavours. I think perhaps they're more Large ship territory (about 45m so not much longer than the 'Falcon and far narrower).
I'm still putting my money on the Lancer Frigate. It might not be iconic to movie-only people, but it's a very well known ship among the EU crowd. At 250 meters it's going to have to be scaled down a bit, but not anywhere near as bad as a Star Destroyer. And thematically, it's a perfect fit as the Lancer was specifically designed to deal with fighters, making its presence in a dogfighting game flow naturally.
Right now I'm not a huge fan of the huge ship format. It really just feels lost without an imperial version. As point it's more played when we just want to screw around with something different but mostly they just sit on my self and 90% of my games are still with the smaller ships. The empire needs a huge ship.

Personally, I think a redesign of any of the ships mentioned to look like miniature Star Destroyers would fulfill most people's desires when it comes to Imperial Huge Ships. That iconic dagger profile is what we want to see in a system patrol craft, not the ugly Lancer-class or Star Galleon. I cannot recall the builder who constructed two of his own on the forum, but that is similar to what I imagine. Add in a carrier concept with fewer hardpoints than the CR90 and you have the beginnings of a cool counterpoint to the gunship. In this department, for the artist/designer in me, I think FFG would do itself a diservice if they dogmatically stuck to available EU canon.
In terms of epic play, you could have the option to add discount academy ties or bombers to the frigate as upgrades. A carrier assemblage to take up a hardpoint (or more) and less hull, but more shield. Makes things a bit more difficult with Vader in mind.
I vote to wait till 2015 to see if Abrams gives us fans an adequate nice-looking imperial ship in the playable scale.
I honestly would prefer that than simply taking any of the available floating sex-toys in the EU.
