I've heared other Rebel pilots nickname the B as 'Blade' or 'Blade Wing', aside from that Ken has nailed all the monikers from Rogue Squadron et al regarding the Imp ships! I love calling bombers 'dupes' I feel slightly pro.
Not a ship, but Turr Phennir is Turd Ferguson aka Mr. Reynolds anytime we play. I think we picked that up from TMB.
I just read in the Kryotos Trap that Lambda Shuttles were nicknamed 'Lambs'.
I suppose that fits the space cattle thing.
I doubt it'd catch on, but I would like to call the Falcon the Frisbee Lobster.
When it was being previewed, I suggested "Blink" for the phantom.

"Brights" referred to the TIE Avenger, which while technically were a form of TIE Advanced, are not the TIE Advanced x1 in this game. I don't know if the x1 had a nickname.

If I recall correctly Blink was designated for a stealthing prototype fighters, which is exactly what the Phantom was in its appearances. So they're a different model with the same purpose? Definitely close enough.

The Empire's nickname for a Z-95 is a "Suicide Sled".

All of these are known nicknames from Star Wars EU. I do like the idea of Blink for Phantoms.
