I would say not. I think you double your agility, then add 1 as it says on the card.

If stealth device read "when defending roll 1 additional die" then I would agree with you. The card clearly states you increase your "agility value" and the single turbolasers double your agility value.

It happens as part of the setup phase, and as such it would be doubled when using a single turbo laser.

Stealth Device doesn't "Resolve" into an extra die. It gives you a higher agility score at the start of the game, which gets doubled.every time when the ZTurbolazers attack.

Stealth Device isn't a triggered ability that needs to resolve, it's just something that's always on. So timing rules don't apply.
For it to double the base agility before adding Stealth Device, there would have to be some point in time when the agility is at its base value. But there is no such time - the agility is just 1 higher than what's printed as long as the Stealth Device is in play.
So a Stealth'ed ship would add, then double. e.g. An Interceptor with Stealth would roll 8 dice against the Turbolaser.
