Just out of curiosity, do you use 1 peg or two on your ships? I always used 1 and treated the not-used ones as extras but looking at pictures I see some using two pegs stacked.
1 peg or 2?
I use 2 pegs for all my ships. The Ship Assembly diagram in the rulebook shows the ship being assembled with 2 pegs.
If you wanted to get really crazy, use 0-3 pegs for all your ships to make it look like they're flying at different altitudes.
I believe in flying as low as possible as that is also the most stable. The problem with that is it leaves you less room to maneuver the templates and other things beneath the ships.
B wings would look awesome on 1 peg going sideways...
I use mine to help differentiate between low and high Pilot Skill ships. For example, If I run 3 x-wings with Wedge and two rookies, Wedge will be on a 2-peg base while the rookies are on one. This immediately helps me visually as a quick check when playing, especially when ships are very close together in the center playing mat.

I've put the Falcon on 4 pegs and all small ships fit comfortably underneath it.
I use 1 peg for the X-wing and falcon, and 3 pegs for tie bombers and the hawk. Everything else is 2 pegs. No real logic to it, I just think it looks best this way.
5 pegs MINIMUM.
I'll usually single peg all my ships except for the highest pilot skill ship in my list. He gets octuple pegged and then I usually glue a couple extra pegs onto the side to keep any other ships from getting too close.
5 pegs MINIMUM.
Mine go to eleven.
I use two every time. It's the ideal, IMO.
1 peg, that way every build I use for the weekly league play fits nicely in my carrying case (everything else is in other storage).
I usually use one peg. Except for B-Wings and large-base ships, of course, heh
X/2 where X is the number of pegs still intact.
One typically, but two for prominent ships like Howlrunner. I like the Falcon on 3, but it means stealing them from the Shuttle or Firespray, neither of which work on one.
1 peg for me. I also use 1 in the Falcon. Looks sort of cool flying close to the surface.
X/2 where X is the number of pegs still intact.
This is why I say go for low ships. That way if you ever break one you have spares.
I use two for everything except the Shuttle.
I find the Shuttle looks better on one.
No pegs. Use a super conductor under the base to levitate the ship with a magnet.
I glued all my TIE/ln pegs together, but all my others are separate. But I 99% of the time go 2 pegs anyway.
2. easier to slide the range ruler around between models
Falcon uses only 1 peg because it would otherwise hit other 2peg models
Zero pegs
1 for the little ships, 2 for the big ones.
It makes the big ships seem much more beefy.
I store my ships on their bases in a compartment case. They all sit quite happily in the case on one peg. I've not actually gamed with them on two pegs, as one peg is nice and stable.
A-wings do not need the crutch the man provides. No peg 4 life
