For Stress and Focus, it depends on if you're fielding Tycho or Kyle + Moldy Crow + RecSpec (need ALL the tokens!!).
For shields. All the Shields. (That way if you're running for a large group every ship you have can be used.) Otherwise a single 100 point can't have more than 20 shields. So 40 covers 200 points.
I currently carry enough tokens to handle any build for two players at 100 points. I will be updating it shortly for epic to carry everything I need for just one player. I currently carry this and I've listed what I intend to bump it up to in brackets:
Focus: 30 (40)
Evade: 20 (30)
Criticals: 20 (20)
Stress: 20 (20)
Ion: 10 (15)
Shields: 40 (60)
Small Bases: 16 (24)
Large Bases: 4* (12)
*I currently only have four large ships but this will cap out at 6 large bases in my standard kit with an extra box carrying additional bases and some of the gear required for epic play so that I don't have to cart it around every time if I don't want to.

I use d6 to keep track of shields instead, especially for those with more shields eg. large ships and Bwings
