...is there any rules where I can create my own race?

I am waiting to receive my copy of Edge of the Empire but just couldn't wait to start working on ideas. I've more questions to ask, and this is where I'll post them, but I want to take it one question at a time. This is the most important:

I really like my avatar, even if it isn't "Star Wars", and would like to make my character based on it. From a design point of view, he'd probably be human but with a fly head and an insect-like exoskeleton. Possibly segmented hands and feet. If I made a miniature, it would probably be a human model with skeleton hands and feet and a fly head.

How easy will it be for me to create such a humanoid insectoid character?

One of the core rule book species is Gand. Perhaps that would suit your ideas.

I second the Verpine, if you're looking for something that looks like your avatar.

Don't forget Geonosians, although I don't think they're in the Menagerie.

They're not. I think most are currently Imperial slaves, and only a small percent of their population is actually sapient in a manner appropriate for PCs. Might just use Verpine stats for 'em for now.

There's no "species creation guidelines" in the core rulebook, and odds are that FFG will never be publishing any sort of rules on doing so; best you could hope for is a list of suggestions.

As for an insectile species, you might be best served going with the lungless Gand as your base if your GM wants to keep things official in terms of what's allowed in their game.

The USM does have Verpine, but mileage varies on if they're worth using or not. And the fact it's "unofficial" may mean your GM won't allow it at the table.

Alternatively, for an oddball suggestion, take the Trandoshan and refluff that to match your PC's insectioid appearance, particularly if you want them to be fairly sturdy with a higher starting Brawn and higher-than-normal base Wound Threshold. Talk with your GM about dropping the regeneration species ability in favor some other minor benefit (perhaps the ability to remove a single setback die imposed by concealment?)

crafting your own species outside of the current rules isn't terribly difficult

Core rules really demonstrate a lot of what you would need to know for balancing one.

One you should never have enough starting experience to get a baseline characteristic higher than 5.

and for each point you increase your base Wounds plus Strain above 20 subtract 10 more starting exp.

No characteristic should start above 3.

Start with all the characteristics set at 1 with 250 experience towards raising them. And at least 75 points saved for the starting experience pool.

Free talents or skills at character creation are typically worth 10 starting experience.

other species specific abilities carry a cost based on power of each individual ability plus or minus 5-10

I ran a Noehon X-wing pilot before in Star Wars D6. Noehon stats were published in Galaxy Guide 12.
