If I have a ship that is equipped with Outmaneuver or I am flying Backstabber and I am outside of a YT's primary firing arc does the -1 defense/backstabber's ability trigger?

Yes. The YT-1300 is able to fire its primary weapon outside of its firing arc, but the firing arc still exists.
