I've been playing this game for over a year now and I love it. I've familiarized myself with most of the pilot abilities and upgrade cards and enjoy incorporating all of them into the game because obviously the game would suck without them. On the other hand, the main person I play with doesn't enjoy using card abilities as much because he's overwhelmed by them and feels they make a game "just about lining up your sites and shooting" too complicated. Because of this I feel he is missing out on a good bit of the fun in the game and he also doesn't make a very good opponent. So I figured I would give him some popular lists to play as which incorporate only a few upgrades if possible so that he can familiarize himself with them a few at a time. I was thinking of just giving him Han shoots first and variants of XXBB with HLC and advanced sensors because I mostly play imperials while he plays rebels. Any other good ideas for rebel lists that use few upgrades and are simple to use?

I think you're right on the money, to be honest. HSF is usually my recommendation for newcomers, both in terms of ease of play and ease of collectability.
Is it abilities that are "too complicated" or everything else that goes with them? I guess I'm wondering what he wants to play because if he really wants to avoid complex pilots I'd simply suggest you let him play that 8 Fighter swarm.
HSF can be simple depending a little on how you equip Han.
I'd say you can make just about any four Rebel ship build "simple."
If he wants to avoid complexities I guess the 666 build with Kyle, Garven and Dutch is kind of out of the question.

To answer the question. I'm a beginner as well and had a lot of success this weekend with xxb builds. All included named pilots in each ship. Wedge with ptl and r2 is pretty dang beginner frieldy I think. I liked less ships with more abilities available. Easier to fly and I could spend time on using a variety of abilities and combos. I learned a lot. Ie ptl is simply awesome. And eu on b's is almost mandatory. Keep it casual give him some list and a link to a squad builder.
