Does an Ionized ship get to roll evade dice?

Does an Ionized ship get to make an evasion roll if fired upon?

Nothing about Ionization reduces the target's Agility Dice. It just dictates its maneuver for the turn following the damage.

Just to head off a possible other question.

A ship that's been ionized, also gets to take actions and fire. The only thing a Ion does, is force the ship to move forward 1 straight, and treat it as a white maneuver.

This does however mean a ship with stress doesn't get to remove it, so at that point the stress prevents it from taking an action.

Which is why Interceptor pilots hate Y-Wings so much...

I also seem to recall that an ionized ship doesn't "reveal" it maneuver dial which means things that would trigger then, like Advanced Sensors, will not function either.

Your recollection is correct.

This comes down to the "not revealing the maneuver dial" issue. You should still be able to drop a mine provided you have an action.
