Type "XXBB" in the search bar and you'll find lots of build threads.
I run 2x Rookies with Engine Upgrades alongside 2x Blues with Advanced Sensors, but now that I've got my Imperial Aces, I may switch to 2x Rookies with Hull Upgrades and R5 Astromechs.
You could also go with 2x Reds with 2x Daggers with Advanced Sensors
You could also go with 2x Rookies with 2x Blues with HLCs.
I placed in the top four in a store champ running 2x Red with R2 and 2x Dagger with FCS. The champion had a rookie, Biggs, and two blues with AdvS, I think.

Both of which are interesting things that I did not suspect

Can you guys give me advice on how you flew them? I'm new and still working on my strategy for different things.
"Biggs walks the dogs" is a great combo to learn the game. Here's the list:
Biggs
Rookie
Dagger+Adv. Sensors x2
As long as Biggs stays within R1 of the squad, any of your opponents that are able to shoot Biggs MUST shoot Biggs. This means you can fly your B-wings up to R1, with Biggs trailing behind them, and blast away at the enemy fleet. You won't be worried about return fire, because Biggs will be taking it all from a distance that makes him hard to hit. By the time they kill Biggs, you will have greatly crippled their fleet and still have two healthy B-wings and an X-wing.
My list (the EU and Adv. Sensors) performs beautifully in a tight asteroid field. I take a clownfish approach, keeping to the shoals when the enemy gets close.
My 2nd list (Adv. Sensors, R5, and HU) trades the X-Wings' maneuverability for tankiness.
The 3rd list (Reds and Daggers with Adv. Sensors) trades the tankiness from my 2nd list to give everyone a higher pilot skill.
The 4th list (Rookies and Blues, with HLCs) goes for all-out firepower.
3 and 4 are "Bloody Daggers" and "Blue Thunder", respectively.
Now, for Ailowynn's two:
Ailowynn's list (a Bloody Daggers variant) gives the X-Wings greater maneuverability after a koiogran, and gives the B-Wings some action-economy options. A hardy list, but not my playstyle.
Ailowynn's 2nd list (Rookie and Biggs) gives your B-Wings their strongest chance of lasting against concentrated fire, giving you hardiness against a Tie Swarm.

This is the exact build I use as well, took 3rd out of 8, and 5th out of 12 in the two store championships I've played in. I have a hard time with swarms. I think subbing Advanced Sensors in for the R2's and the FCS's would help with that, but as it stands this build just demolishes big ships with ease. B-wings firing with both focus and target lock are just tough to defend against. It also has a much easier time going up against Rebel fleets rather than Imperial fleets.
I have the most success when I run a tight formation until the first two or so combat rounds, and then I can peel off into dogfights to finish up what I've softened up. I lead with the X-Wings so they tend to be the first targets for my opponent. Once they get really beat up, especially against higher PS large base ships, I use them to block moves and deny actions so the B-Wings have an easier time shooting things down.
I love
Wedge with swarm, Biggs and 2 blues. Fly the 2 b-wings and your first move b's & Wedge 3 strait with Biggs doing a 2 strait . Still at range 1 of the other ships.
