I am creating a new Bothan NPC that will be a nemesis in future adventures, but... I actually have no real knowledge of them, what are they like how do they act, what are your likes and dislikes of the Bothan race?

So not going to be upset when they clean out the EU attic...
They're invarably all spies of some sort and many will die bringing information to someone. 
Yeah, if I have one bad habit running my campaigns is I tend to hit the tropes pretty hard at times. My players know this and, to them, if a Bothan isn't dead or dying that means its going to spy on and/or betray them, leading to the other state of Bothan (non)existance.
So not going to be upset when they clean out the EU attic...
That among other things, though I thought they retconned the Pan-like character from the Jedi vs Sith comics into just a seperate species instead of a hybrid. Also, didn't early drawings of Bothans have them looking like hairy elves?

Yeah, my SWSE group hates them with a passion. Their political backstabbing nearly doomed the New Republic 3 times so they are not well liked in the EU.
We have a Bothan PC in our group, an Outlaw Tech.
I made an NPC contact for him, another Bothan Mechanic who taught the PC his trade.
I play him as a Bothan who left the SpyNet out of a principled stance against the kind of political intrigue and infighting that has made the Bothan reputation.
However, he can't really walk away from it, it's in his nature to want to collect information and use it to his own advantage.

They have thick coats of shaggy fur and are often ridden by the Tusken Raiders of Tatooine, who always ride single file to hide their numbers.

While the Bothans have been visually redone multiple times (I'd love to see a piece of art depicting "the artisitic evolution of Bothans"), I'm pretty sure you're describing a Batha. Of course, give the artists depicting Bothans another decade and you might be totally correct.
