There is no limit. If a ship has at least one stress token it cannot
- execute a red maneuver or
- perform an action.

Tycho Celchu (A-Wing) can perform actions even when stressed.
As dvor notes there is no Maximum number of Stress tokens a ship could have. Having stress does prevent the ship from doing certain things but there may be specific exceptions called out such as Tycho.
While Tycho is the most common reason you'll see multiple stress tokens it is NOT the only way. There are other ships and soon abilities that can gain tokens outside of the "normal" methods. Also remember that a green maneuver only discards ONE token at a time; in the case of Tycho he may be able to perform actions while Stressed but if he attempts to perform a Red Maneuver he is treated like everyone else.
There is nothing quite as funny as seeing Tycho dragging around enough stress tokens that his A-Wing should have a trailer atteched! ;-)

1 for PTL/EH/DD
2 for critical damage card
1 for rebel captive
1 for Kath
So in one turn, a ship could get 5 stress tokens, but there's no reason for that to even be a max - one can continue to shoot at rebel captive / shot at by kath, they would continue to get 2 per turn, to a max of infinity!

Also, Captain Yorr is a thing that exists.
So, there are a few options:
1 for PTL/EH/DD/Koiogran
2 from Critical Hits
1 for Rebel Captive
1 for Kath
X from Flechette Torpedoes (in a 100 point fleet, including Kath + Rebel Captive, X = 4 at maximum in a single attack, or 5 spread over 2)
=9-10 stress tokens
Vs
3 for Captain Yorr
2 from Critical Hits
1 for Rebel Captive
1 for Kath
=7
And then there's that new Astromech droid that stresses the pilot to stress the ship fired upon, so a blended fleet has one more stress to offer.

There are very few exceptions.
There are no limits but but keep in mind that Yorr can't use his ability if it will bring him over 2 stress and the new Transport action that's been spoiled adds stress until it equals 2, so those at least become useless at certain points.
