Since the Cruisers and Destroyers have a ton of weapons(eg 5 Medium Turbolasers, or 5 quad light turbolasers), can they all fire in one Action? or only 1 weapon per Action?

It depends on how many initiative slots you want to keep track of for the ship. If you want to have one slot for piloting, one slot for engineering activities, and one slot for each weapon battery (I suggest using minion rules and working the weapons in groups), you can. OTOH, you could just roll once for the entire ship if you want.

5 medium turbolasers is a lot? In WEG MC80s had 48 turbos, and in Saga they had 24 though those were combined into 4 batteries. And in EOTE the Assassin Corvettes have 6 twin turbos, and they are less then one quarter the size of a Heavy Cruiser and less than one sixth the size of a Star Destroyer.
Can you group these guns together - as if they're a minion group? Seems like a lot of rolling, otherwise.

Probably the sanest thing to do considering the Imp II in the Rebel book has 30 port and starboard quad heavy turbolaser batteries (and dozens of others!) that can fire to the sides and forward... that could be a lot of rolling.
Plus it would kind of make sense the fire control commander(s) might split fire between multiple targets by grouping up 10 here, there and or just volley groups so that the Slow (2) trait isn't too much of a factor.

You'd need some guts to take one on, that's for sure.
6 x 5minion groups having about 3-4 yellow dice, maybe some greens and a blue for aiming... which do damage 11, crit 3 with the breach 4, linked 3 and slow firing 2 traits. ![]()
Course, little ships have some abilities make it 'difficult' to hit them, but not nearly enough, 2 hits and the average transport is probably scrap.

There is an actual action for that in the AoR Beat updates...
Might make it a lot easier to just use a single weapon type and make one barrage roll instead of trying to actually break down every weapon type into minion groups....
